1. Loaded veggie pasta salad

3. Grilled cheese burgers

Loaded Veggie Pasta Salad:

· 2 boxes of pasta (I use Banza penne)

· 2 cucumbers (chopped)

· 1 carton on cherry tomatoes (sliced in half)

· 2 cans of sliced black olives

· 3 bell peppers (I use orange, red, yellow)

· 1 chopped onion

· Cilantro

· 5oz olive oil

· 3oz rice vinegar

· 1 tsp onion and herb (Mrs. Dash)

· 1 tsp Italian seasoning blend

· Garlic salt (to taste)

· Pepper (to taste)

· Smoked paprika (to taste)

Cook pasta as directed and allow to cool. Wash and chop all veggies and add to cooled pasta. In a separate bowl combine olive oil, vinegar, and seasonings. For the dressing you can use more or less of any of the ingredients because I just eyeball it (the smoked paprika really makes it perfect). Once combined, add it to the cooled pasta and stir until it is fully covered.

Easy Taco Casserole:

· 1 green pepper (chopped)

· 1 chopped red onion

· Garlic (to taste)

· Taco seasoning packet

· 1 can black beans

· 1 can corn

· Refried beans

· 2.5 cups white rice (cooked)

· Cheese (shredded)

· 1 cup salsa

· Cilantro (to taste)

· Sour cream optional

· Avocado optional

Sautee the black beans, garlic, onion and green pepper until translucent. Next add the black beans, corn, salsa and taco seasoning. In a casserole dish add the cooked white rice to the bottom layer. Next spread the refried beans. On top of that, add the bean and corn mixture. Lastly top with your choice of shredded cheese. Bake at 350F for about 20 minutes. You can serve it with sour cream and avocado slices on the side.

Grilled Burgers:

· 2 1/2lbs ground beef

· 1 TBSP olive oil

· 1 TBSP garlic powder

· 1 TBSP onion powder

· 1 TBSP Worcestershire sauce

· Salt and pepper (to taste)

· Butter (sliced into chunks)

· Sliced cheese (I used American)

· Buns

· Mayo optional

· Tomato optional

· Lettuce optional

Mix all of the spices, Worcestershire and olive oil. Add the spice mix to the meat and mix completely. Create 6 equal sized patties. Take a small chunk out of the middle of the patties and place a pad of butter into the whole. Cover the butter with the remaining pieces of meat so that the butter is completely covered. Cook the patties to desired heat. Personally I cook mine until completely well done since I’m pregnant. To finish, add cheese if desired and top with your favorite toppings.
